Gluten & Sugar Free Banana Loaf


Autumn has hit like nobody’s business and brrrr is it cold! And what better way to nourish oneself other than by baking!? I must admit I haven’t baked much in my life but since I’ve become obsessed with eating well, I’ve discovered that I love to bake! Thus inspired by Instagram’s Papaya Sunshine Marie’s recipe for this vegan bread, I was on my way. I have made this three times in the past month in fact, and even was confident enough to bake one loaf for my in-laws! I know, shocking.

Enough banter…Here’s the recipe!

I have altered it extensively and have taken out all the sweeteners originally put in except for the bananass & Buddhas Awakening and have added extra fibre with prunes and psyllium husk.

2 ripe mashed bananas
1/2 cups gram flour  plus 1/4 cup coconut flour
1 1/2 tsp of baking powder
1/2 cup of ground almonds
2 tablespoons of Buddhas Awakening cereal  plus 1 tablespoon of psyllium husk
3/4 cup of chopped prunes
3/4 cup of almond milk
1 tbs of vanilla extract
1 tsp of cinnamon

Put ground almonds, dates, banana, flaxseed, sweetener, vanilla and milk in one bowl and combine the mixture evenly. Should be a liquid consistency. Then slowly tip in the flour mixing as you go along until you get a nice batter, you may need a little more milk but judge for yourself.
Pour batter mix into a greased loaf tin and cook in the oven for around 40-45 mins at 170c.
Make sure it’s cooked in the middle by using a skewer.
